椰汁咖喱鸡肉饭

原料:咖喱粉,蒜,姜,洋葱,鸡肉,番茄,听装椰子汁,橄榄油

步骤:

  1. 准备材料。鸡肉切小块,洋葱切成和鸡肉大小相仿的块,番茄去皮剁碎,蒜姜切成末;
  2. 锅里放少许橄榄油,少许蒜末姜末,煸出香味后放入鸡肉和洋葱,炒到熟,可以多翻炒一会儿去掉洋葱的辛辣味,然后盛出待用;
  3. 制作咖喱汁。锅里放适量橄榄油(比煎荷包蛋的用油量多些),多放些蒜末姜末,煸出香味后即可放入咖喱粉拌匀,切勿煸到蒜末颜色开始变深。然后倒入两三勺椰子汁,椰子汁可以增加咖喱汁中的甜味。再倒入剁碎的番茄,番茄可以增加咖喱汁中的酸味。
  4. 最后将已经炒熟的洋葱和鸡肉倒入锅内和咖喱汁充分混合,就可以装盘了:
