茭白炒鳝丝

1. 鳝丝洗干净,切段,茭白洗干净,切丝
2. 煸炒鳝丝,喷黄酒,放少许姜丝,然后盛出
3. 煸炒茭白,炒到半熟后放入鳝丝一起炒,放味精和盐
4. 勾薄欠,装盘,撒少许白胡椒,即可

茭白炒鳝丝

小窍门: 菜场里买鳝丝时要看鳝丝肚子里的血,如果凝固成完整的细长条的,说明是活着被烫死然后划开的,否则就是死的鳝鱼划开的。死鳝鱼是不能吃的。
