干煸苦瓜

最近迷上了吃苦瓜。买两只新鲜生脆嫩绿的苦瓜,洗净剖开,挖掉瓤和籽,切成半指长的段,放点盐热油一煸炒就可以了:

通常店里的做法都是切成半圆的片,清炒或者炒肉片,但大都炒的太熟,没有了脆劲,软软塌塌的,虽然苦味没有了,但那股清甜味也给炒没了,营养也流失太多。买苦瓜的时候要挑嫩的,绿的浅的,炒出来才有脆劲。如果是过于成熟的,颜色趋深绿的,剖开后籽发红的,即便一炒就出锅,吃口也是酥的。
