红烧鳝筒

1. 菜场里买两条鳝鱼,粗的那种,让买鳝鱼帮着杀好,切段,回家洗干净。
2. 锅里放油烧热,放鳝鱼翻炒,同时放两片姜。鳝鱼肉变色后喷些黄酒。
3. 放蒜瓣,酱油,无须放味精和盐。放少许水,盖上锅盖用中火煮大约二十分钟。中间翻动几下,加水防烧干。
4. 等到汁收干,放一小撮糖,翻炒一下出锅装盘,撒上葱花即可。
